Jamaican Tender Sliders with Jamaican Potato Salad

Jamaican Tender Sliders

Ingredients

  • 1/2 of a 3-pound bag All-Natural Tyson® Boneless Skinless Chicken Tenderloins, thawed
  • 3 cups shredded Green Cabbage
  • 1 cups shredded Red Cabbage
  • 1 cup shredded Carrots
  • 6 Bananas, sliced
  • 1/2 cup prepared Slaw Dressing, store bought or homemade
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • Hawaiian-Style Slider Rolls, split and toasted

Jamaican Marinade

  • 1/4 cup minced Jalapeño
  • 1/4 cup minced Red Onion
  • 1 1/2 teaspoons minced Garlic
  • 1 teaspoon ground Allspice
  • 1 teaspoon dry Thyme
  • 1/2 teaspoon crushed Red Pepper
  • 1/4 teaspoon ground Black Pepper
  • 1 teaspoon Kosher Salt
  • 1/4 cup Vegetable Oil
  • 2 tablespoons White Wine Vinegar
  • 1 tablespoon White Sugar

Directions

  1. Combine all Jamaican marinade ingredients a large mixing bowl.
  2. Pour over tenderloins, place in a seal-able container or zip-lock freezer bag and refrigerate overnight.
  3. Remove tenderloins from marinade. Discard marinade.
  4. Skillet

Sear tenderloins in a large well-oiled skillet 2-3 minutes on each side.

Reduce heat to medium and cook the tenderloins for 5-7 minutes or until internal temperature reaches 170°F.

Use a clean set of tongs; flip the tenderloins often to help even the cooking throughout.

  1. Grill

Preheat an outdoor grill over a low heat.

Place tenderloins on grill.

Cover and grill for 20-25 minutes, turning 1/2 through, or until internal temperature reaches 165°F.

  1. Combine slaw mix, bananas, dressing, salt and pepper in a mixing bowl.
  2. Evenly divide tenderloin and slaw between toasted rolls.
  3. Serve.

Ingredients

  • 1 1/2 pounds Fingerling Potatoes
  • 1/2 cup Mayonnaise
  • 2 tablespoons diced Red Onions
  • 1 tablespoon diced Jalapeños
  • 1/4 teaspoon ground Allspice
  • 1/2 teaspoon dried Thyme
  • 1/4 teaspoon Chili Flakes
  • 1/8 teaspoon ground Turmeric
  • 1/4 teaspoon Garlic Powder
  • 1 tablespoon Sweet Pepper Jelly
  • 1 tablespoon Hot Pepper Relish
  • 1 tablespoon Stone Ground Mustard
  • Kosher Salt and freshly ground Black Pepper

Directions

  1. Boil potatoes for 15-20 minutes or until fork tender. Strain and refrigerate to cool. Once cool, slice potatoes into 1/2-inch pieces.
  2. Combine all of the remaining ingredients with potatoes in a mixing bowl and refrigerate.

Serve with Jamaican Tender Sliders.
